I’m beta testing the new Midi Guitar 3 app from Jam Origin.
It works really well!
And it still feels like a small miracle getting polyphonic midi out of the guitar’s jack output.

Signal path:
* Guitar jack out straight into Logic Pro X.
* Controlling five soft synths at once from Propellerhead’s Reason and Logic plugins.
*Mastered by Logic’s AI mastering software.
